Italian Sausage Soup
Soups have come to be one of my favorite things. Lots of people actually like soup for being soup. I have yet to find a soup that would make it into my favorite food list (it’s just not something I’ve ever craved)…but I do love the fact that you can mix up a big batch, divvy it up into containers and stack them up in the freezer to be pulled out whenever you forget to plan a lunch (or whenever dinner gets burnt). They have the added perk of making your freezer look very organized (especially if you have stackable containers), healthy looking (you can hide the tater-tots behind the stack of soup…) freezer. Anyway. This Italian soup resulted in five fabulous lunches for us over the course of the last three months – and I only cooked it once!
Mediterranean Pork Chops
This is one of the first “whole meal” recipes I found and made on my own years ago. I’m sure there were others, but this one made a last impression as an amazingly flavorful meal with a minimal amount of dishes in a short amount of time. I’ve also recently discovered that the ingredients are really cheap and it makes great leftovers!
