Every year my mom would ask us what Christmas cookies we’d want to make. And every year my brother would shout out “Caramel Corn” before anyone could say anything else. And every year, my sister and I could rest easy that we could have two of our favorites instead of just one.
This caramel corn is worlds away from the “caramel corn” that comes in that Christmas tin from Walmart which will then sit around your house for another three months until it is so old you don’t feel bad throwing it out anymore. It is melt-in-your-mouth goodness. Mostly because it has zero nutritional value and a billion-and-one calories…but hey, it’s Christmas. Those don’t count!
